Yeast Shortage

It has come to our attention that there is a nationwide shortage of active dried yeast at the moment. Lets hope we can all find enough yeast to keep baking bread until the supply of yeast becomes consistent again.

On the Topic of Yeast

Many of you have questions about what yeast to buy and what does it look like when it works that I thought I would tackle that question here.

So what to buy? We recommend Active Dried Yeast, from a "bulk bin" style shop, like Bin Inn. You should not buy yeasts that look like they have a "flour dust" on them often called "surebake" yeast as that flour like stuff actually contains gluten, yes you read right. Using that yeast would likely make any of you Coeliacs feel very sick, so beware.

While your at the bulk bin shop it's a great place to find the molasses you will need too if making our "brown" style loaves. Saves making another trip!

 

Now onto how yeast should look when you are getting it ready to bake with it.
The following paragraphs have been taken from our News page so please excuse any repeating myself but I feel its all valuable info anyway.

Thanks to our customer feedback and questions it has come to our attention that not all yeast is as fresh as it needs to be to work properly. Several of you have reported problems in getting your yeast to ‘reach the top of the jug' or to bubble and grow at all, and the yeast you were using had been brought from one of the large supermarket chains.
When we make our bread at home, we have always used active dried yeastHow your yeast should look brought from Bin Inn Tauranga and have found it performs as yeast should.
So the conclusion we have drawn is that despite containers of yeast often having months until reaching the ‘use by' date it may already have sat on a supermarket shelf for far too long to work effectively e.g.; its not fresh enough. We would recommend buying your yeast from a "bulk bin" retailer as we suspect they have a faster turnover of their yeast, therefore they sell yeast that is fresher and will produce better bread.

Allergy Today Magazine

Guess what came in the post today, our Allergy Today mag. We are so excited as this is the first time we have advertised in this magazine and we couldn't wait to see our add. Now I know we are biased but we think it looks fantastic, but the proof will be in the pudding (or bread) as they say. So if you have seen the advert let us know. (If not go back and have another look :-) )
We are pleased to have created a mix that is free from so many of the common allergens that for a family struggling to find something everyone can eat it should solve the "what bread can we eat" issue. For those of you who haven't heard, every single one of our mixes are Free From; Gluten, Wheat, Dairy, Soy, Additives and Preservatives, Potato, Sesame, Eggs (and Yeast.)
Please note though that our recipes are written using both the eggs and yeast, but dont despair, to make an egg free loaf have a look on our tips page for a tasty solution/ alternative.
As for a yeast free loaf, if you know how feel free to bake it that way.
We are test baking flat out so that we can publish a ‘yeast free" option however we are not yet happy with the results, the bread we have made thus far is ok but not yet up to our usual "BIG" loaf size.
If anyone has some fail safe ideas for a yeast replacement please do share them here with us and we will give them a go.

You Are The Motivation!

So what do I mean by that statement?
Well the reason we wanted to create a blog on our site is so we can "talk" with you our customers on a more regular basis, not only about our bread & mixes but any Gluten Free related questions you might have.
This desire to communicate more has come about through attending shows like the one we recently did as part of the Garden and Arts Festival down at The Lakes. We enjoyed interacting with you the customer so much, being able to answer questions and show you tips etc for how to get a great loaf of gluten free bread.
So we though why not be able to do this more often, and so our blog has begun.
We see it being as much a place for you our customers to write and chat, give feedback and make requests etc, as it is about us being able to share our tips and knowledge with you.
