Tips for making the best Goodness Me - Gluten Free Bread.

Maintaining all ingredients at a warm temperature 40-45ºC keeps the yeast organisms in an environment where they will grow best. Warming the tins and using warm liquids (See learner recipes) both help this, and cuts down the time taken to produce a lovely loaf. Do not use a plastic jug for this process.

Use only pure yeast granules (often called Active Dried Yeast). Beware as "bread improver" products often found alongside yeast granules in the supermarket are NOT gluten free.

Placing a dish of water in the bottom of the oven during cooking slows down the drying of the top crust of the loaves, if you find your loaf becomes too brown.

If not eaten the same day, we suggest slicing and freezing the bread for future use. As this bread has no preservatives or additives it will not keep fresh for long without freezing. You can use straight from frozen for toasting- just remember to give extra time to achieve the usual golden brown toasted colour.

Making a successful sandwich: First remove slice(s) from the freezer. Wrap in a paper towel. Microwave for 1 minute on High power for one slice (add about 20 seconds for each extra slice) Then use to make your sandwich as you would with fresh bread. This process seems to restore the correct moisture balance in the bread resulting  (in our opinion) in a better sandwich. As all microwaves vary you may need to adapt this technique to suit your sandwich needs.

Flat breads. Fancy breads such as focaccia or cheesy topped flat breads can be made with imagination from the Goodness Me - Gluten Free White bread mix.Bake for 20 minutes only.

Remember, without the strength of gluten the dough will only rise a little on a baking tray as it tends to spread outwards. Better results can be gained by placing dough in a greased oval dish to give it a shape to mould to.

Buns. Use your favourite Goodness Me - Gluten Free bread mix to make buns in a 6 mould Texas muffin tray or other small round tin. Rise as usual but cook for 20 minutes only. The Spicy Fruit loaf makes great Hot Cross buns for Easter time.

Pizza. The Goodness Me - Gluten Free White bread mix makes a great pizza base, using a half loaf quantity. Keep cooked bases  in the freezer for a quick meal - just add your favourite toppings. Bake for 20 minutes only.

What about a breadmaker? Please  understand that our bread mixes were initially developed without the use of a bread maker, and we believe the manual method, as well as being very simple to do, delivers the best gluten free bread loaf. However, we understand the need to cater to those who for one reason or another can't indulge in the pleasure of traditional methods of baking gluten free bread, so feel free to experiment in your own breadmaker but results will vary widely from appliance brand to brand and operator to operator, and we believe this method may not deliver optimum taste nor the loaf quality that our mixes do when done by hand. If your breadmaker brand doesn't have a gluten free cycle, you may find it easier to mix by hand, remove the breadmaker paddle. before setting cycle. See the recipe page for a sample Breadmaker recipe.

Dietary Intolerances.

Note:  the resulting loaf will obviously be different to the original, but still very tasty.

Dairy and wheat. None of our bread mixes have wheat in them and our recipes are developed without the use of dairy products, so our Goodness Me Gluten Free Bread mixes are safe to eat.

Egg. Finely grind 3 tablespoon of whole flax seed to a powder. Pour over 9 tablespoon of boiling water. Leave for about 15 minutes to    activate, stir and use in place of eggs in the Goodness Me - Gluten Free bread mixes. However you will need to reduce the total water component of the recipe by a ¼ cup.

Other allergens. All our mixes come free from: potato flour, soy flour, sesame seeds, eggs and yeast . (Note that our recipes are written with the use of  yeast as the raising agent.)
